For me, there are few things as comforting as a home cooked meal. The smell of garlic simmering on a pan, trying to get the mix of spices just right, trying to capture the same flavours I remember from my childhood.
For Lolo, the recipe that brings back memories of home and family is the bean soup her father cooked for her as a child. This refugee week, she wanted to share the recipe with you. The traditional recipe is made with beef, but Lolo has shared how it can easily be adapted to suit a vegetarian or vegan diet.
She said: ‘now that I’m living in the UK cooking this is like having a piece of my country with me.’
Refugee Week runs from 14-20 June this year. For us, it’s a time of welcome, celebration and reflection. A time to show that we’re stronger together.
As well as Lolo’s recipe we’ll have book recommendations, mindfulness activities, playlists, poems and more – we hope that there will be something for everyone to enjoy.
